Potato stuffed bell peppers is simple and quick to prepare dish, which can be served for lunch or dinner. Sweet taste of baked peppers mixed with spices and sweetness of potato making this dish extremely tasty. Easy way to impress your family or friends and offer one tasty vegetarian dish. During winter you can use frozen bell peppers if fresh not available.
Ingredients:
- 8 bell peppers
- 1 kg potato
- 1 teaspoon Vegeta
- 1/4 teaspoon black pepper
- 2 tablespoon oil
- Wash peppers, remove top, seed and leave them aside.
- Wash, peel and grate potato.
- Add vegeta, 1 tablespoon oil and black pepper.
- Mix ingredients well.
- Fill peppers with this mixture.
- Oil baking pan, spread peppers around and pour some oil over.
- Bake in preheated oven at 200 C for about 40 minutes.
